Easy Microwave Cornbread!










I know what you're thinking, "Microwave baking!?", but let me explain. Since moving into an RV the microwave has become my best friend. I've made muffins, brownies, cakes, etc.. all in the microwave. I'm actually "baking" from scratch more now than I ever did before (let's be clear, I never did beforebecause it's so much easier! You don't have to mess around with all that "waiting for things to bake", which is great. I-need-brownies-and-I-need-them-now ring a bell? 


This cornbread recipe only takes about 10 minutes from start to finish, and is very comparable to the baked version. In fact, we've already made it at least 5 times, perfecting the recipe as we go. So here it is!


Ingredients:


  • 1 1/2 Cups Corn Meal
  • 1/2 Cup Flour
  • 1/4 Cup Oil
  • 1/4 Cup Honey
  • 1 Tbs Baking Powder
  • 1/2 Tsp Salt
  • 1 Cup Milk
  • 2 Eggs

Mix the ingredients in a microwave safe bowl, then nuke for 7.5 minutes. 


*Note - time may vary depending on the power of your microwave. 

Cornbread is done when a toothpick comes out clean.
